Grilled Veggies and Cheese Sandwich

Grilled cheese sandwiches are traditional comfort food. We’ve added a few vegetables for a healthier twist on an old favorite.



  • Cutting Vegetables1/2 tablespoons olive oil (optional)

  • 1 cup sliced fresh mushrooms

  • 2 tablespoons chopped green onion

  • 2 tablespoons shredded carrots

  • 2 tablespoons water

  • 1/2 teaspoon lemon juice

  • 1/8 teaspoon garlic powder

  • 2 slices tomato

  • 2 slices avocado

  • 2 slices toasted whole wheat bread

  • 2 slices part-skim mozzarella cheese, cut into fourths



  1. Coat a non-stick skillet with cooking spray and/or add 1/2 tablespoon olive oil to skillet and heat to medium.

  2. Add mushrooms and next 5 ingredients to pan. Saute until crisp-tender. Drain.

  3. Place tomato and avocado slices on toast. Spoon mushroom mixture over tomatoes/avocados. Top each with 4 cheese pieces.

  4. Broil 5 1/2 inches from heat for 2-3 minutes or until cheese melts. Serve immediately.
